[Fried tofu] ABURAGE

Deep-fried tofu is made by cutting tofu into thin slices and deep-fried. Thin fried tofu is fried to the middle, but thick fried tofu is fried only on the surface and is called ATUAGE. Fried fried tofu is rich in protein and is used in various dishes. The fried tofu itself is boiled in soy sauce and sugar, boiled with vegetables to make a dish, or used as an ingredient in miso soup. There used to be a tofu shop in Teshima, but now we buy fried tofu at the tofu shop on the neighboring island of Shodoshima.

【油揚げ】ABURAGE

油揚げは豆腐を薄く切って、油で揚げたものです。薄い油揚げは中まで揚がっていますが、厚い豆腐を揚げたものは、中は豆腐のままで厚揚げと呼ばれます。油揚げはタンパク質が豊富で、さまざまな料理に活用されます。油揚げそのものを醤油と砂糖で甘辛く煮たり、野菜と煮込んで料理にしたり、味噌汁の具にしたりします。豊島にも昔は豆腐屋がありましたが、今は、隣の小豆島の豆腐店で油揚げを買います。
