Eggplant is a vegetable cultivated all over the world. European and American eggplants are white or bright purple, but most Japanese eggplants have purple or black-purple skins. This is because it is rich in anthocyanins. There are many houses that make eggplants in Teshima. The season is from summer to autumn.

Eggplant may be eaten by baking, simmering, tempura, or pickling.

In Japan, it is said that dreaming an eggplant at the beginning of the new year is auspicious.
