Yellowtail is a large migratory carnivorous fish that is commonly eaten in Japan and is also a popular fish for sushi. It is a winter fish with delicious fat. Yellowtail cultivated on Shodoshima, which is next to Teshima, is a very high-class ingredient. In particular, yellowtail, which feeds olives, is a specialty of Shodoshima.

The way to eat is mainly Sashimi or Grilled with salt. Even off the coast of Teshima, yellowtail that has escaped from the farm may be caught.

【ハマチ】HAMACHI

ハマチは、回遊性の大型肉食魚で、日本では一般的によく食べられる魚で、寿司にしても人気の魚です。冬が旬の魚で、美味しい脂がのっています。豊島の隣の小豆島で養殖されたハマチは、とても高級な食材です。特に、エサにオリーブを食べさせているハマチは、小豆島の名物です。

食べ方は、主に刺身か、塩焼きです。豊島の沖でも、養殖場から逃げ出したハマチが捕れることがあります。
