[Perilla] SHISO
Perilla is one of the Japanese-style herbs and is an aromatic annual herb. It is also cultivated in the fields, but most of them grow naturally on the side of the fields, with seeds spilling every year. There are Akajiso (red perilla) and Aojiso (blue perilla) depending on the color of the edible leaves, Ohba (Macrophyll) is another name for Aojiso. Akajiso is pickled with dried plums and has a beautiful red color. Aojiso is used as a decoration for sashimi and is eaten with it. It is also used as a condiment for Somen noodles and has a refreshing aroma. It is used just like basil.

【シソ】SHISO
シソは、和風ハーブの一つで、芳香性の一年生草本です。畑でも栽培されますが、多くは畑の脇で、毎年種がこぼれて、自生しています。食用にする葉の色により赤ジソと青ジソがあり、大葉は青ジソの別名です。赤ジソは梅干しと一緒に漬けて、きれいな赤い色を着けます。青ジソは刺身の飾りとして使われ、そして刺身と一緒に食べます。素麺の薬味としても使われ、爽やかな芳香があります。ちょうどバジルに近い使われ方をします。
