Bracken is a kind of fern plant, and it grows in clusters at the foot of the mountain in Teshima. The season is spring, and it is counted as one of the wild plants. The harvested bracken is de-squeezed and seasoned with soy sauce or vinegar. Enjoy the thick texture.

The culture of eating wild plants has become less common in recent years, but bracken, royal fern, butterbur sprout, etc. can be harvested in Teshima. In the spring season when vegetables are scarce, it is a valuable ingredient, and its harvesting work is one of the pleasures of the season.

【ワラビ】WARABI

ワラビはシダ植物の1種で、豊島では山の裾野に群生しています。旬は春で、山菜のひとつに数えられています。収穫したワラビはアク抜きをして、醤油や酢で味付けをします。とろりとした食感を楽しみます。

山菜を食べる文化が、近年あまり見られなくなりましたが、豊島ではワラビ、ゼンマイ、フキノトウなど、野菜の少ない春の時期には、貴重な食材であり、その収穫作業は、季節の楽しみの一つとなっています。
